Curried Apple Slaw on Greens or in a Burrito

Curried Apple Slaw
serves 3-4 as a meal
dressing:
1/2 avocado
1/2 cup of almonds
1/4 cup of red pepper
2 Tbs yellow onion
2 Tbs celery
1 clove of garlic-optional
1/2 tsp sea salt or to taste
1/8 inch slice of ginger, size of a quarter
1/2 -1 tsp curry powder
3/4 - 1 cup of water
Blend ingredients in a high speed blender until smooth & creamy. Set aside.
Veggies:
1 cup of broccoli, chopped
1 cup of pea shoots
1 tomato, diced
1 carrot, sliced or shredded
1 cup of cabbage, shredded
1 apple, diced
1/2 cup of raisins
1/2 cup of fresh chopped herbs, cilantro or basil
Place veggies in a large bowl & toss with dressing. Serve over a bed of greens or inside a cabbage leaf as a burrito. Yummmmmmmmm!
Taco Salad

Taco Salad Makes 4 Servings
Taco meat:
1 cup of walnuts
5-6 sundried tomatoes, soaked 1-2 hours
1 clove of garlic
1 Tbs cumin
1 tsp coriander
1/2 tsp chili powder
pinch of sea salt
Blend ingredients together in a food processor until it looks like taco meat. Place in the center of a platter & surround with salad toppings.
Salad part:
1 head of green or red leaf lettuce, shredded
2 tomatoes, diced
1-2 ears or corn, corn removed
¼ cup of diced onion
1 avocado, diced
½ lemon or lime juiced
Surround taco meat with shredded lettuce & top with remaining salad ingredients,
Dressing:
1 cup of cashews
1 1/4 cups of water
zest from 1 lime
juice from 1 lime
pinch of sea salt
Blend everything in a high speed until smooth & creamy. Pour into a 16 oz jar. Drizzle some over top of the salad & save the rest for later. Store in refrigerator.
Un-tuna Cranberry Dill Salad

Un-Tuna Cranberry Dill Salad
Inspired by Matt Amsden’s RAWvolution
Serves 6-8
Un-Tuna
3/4 cup of almonds, chopped (ok to soak overnight)
3/4 cup of sunflower seeds, chopped (ok to soak overnight)
2 scallions, diced
2 stalks of celery, diced
1 Tbs dulse flakes
2-3 Tbs dried dill
¼ cup of dried cranberries
Mix ingredients in a bowl
Mayo
1 cup of water
1 cup of cashews, soaked 1-2 hours
1 Tbs mustard seeds
2 cloves of garlic
1 1/2 lemons, juiced
½-1 tsp sea salt
1 Tsp apple cider vinegar
Blend ingredients in a high speed blender until creamy. Mix Mayo into un-tuna. If you don’t have a high speed blender, chop nuts & mustard seeds into a flour in a spice grinder or coffee grinder & then mix in with other ingredients in food processor or blender.
Salad
6 large pieces of greens
2 apples, peeled & sliced
½ cup of shredded acorn squash
¼ cup of dried cranberries
Place greens on plate. Top each green with a sliced apple & shredded squash, followed by a scoop of un-tuna & a few dried cranberries. Eat up!
