Papaya Coconut Green Smoothie

makes approx 1 1/2 liters of green smoothie
3-4 swiss chard leaves
1 baby thai coconut, meat & water
2 bananas
1/2 papaya, peeled & mostly seeded
1-2 cups of water

Chop fruits & veggies & place in blender. Open the baby thai coconut--watch this video to see 1 way of doing it--and place coconut water & meat in blender. Add a little water & blend until smooth & creamy. Drink up! Happy

NOTE: you can eat Papaya seeds--they are a little peppery in taste, so I only add a few to my smoothie.
NOTE: You may have to blend this in 2-3 stages to fit everything in.

makes approx 1 1/2 liters of green smoothie
1/2 head of romaine lettuce
1 handful of parsley
1 handful of cilantro
2 stalks of celery
1 apple
1 pear
1/2 cucumber
juice fro 1-2 limes
pinch of sea salt
3-4 cups of water

Place ingredients in blender & blend until smooth & creamy. Drink up!
NOTE: You may have to blend this in 2-3 stages to fit everything in.

Refreshing Mint Drink

Refreshing Mint Drink
1 1/2 cups of almond milk
1 banana (frozen or not)
1 small handful of mint

Place ingredients in a blender & blend until smooth. Drink up in a shady spot!

With this little heat wave here, we need a yummy refreshing drink to enjoy on the patio or deck, don’t you think? I made this one this morning with some mint sprigs from our garden & it tasted to so good!
